Can I screen-share between two older MacBook Pros (2009-2011) running Snow Leopard (10.6.8)?
No.
You cannot screen share by connecting a male-to-male Mini DisplayPort cable between the two Macs.
You cannot screen share by connecting an Apple Thunderbolt Cable between the two Macs.

Target display mode mojave
Mojave is not supposed to support Target Display Mode. You need High Sierra or older.
