Removing (or disabling) Music app in macOS
If you just need prevent Music app or iTunes to launch, you could use noTunes: https://github.com/tombonez/noTunes
I didn't manage to find any better to disable it.

Can't enable SSH on Catalina - System Preferences keeps saying "Remote Login starting..."
The problem can be solved by manually adding the relevant launch daemon yourself via the Terminal, with the following command:
