macOS includes the Wireless Diagnostics.app (you can access it e.g. by <kbd>alt</kbd>-clicking the wireless icon in the menu bar). This may help you debug the issue further. Go to Window > Performance and try to capture the moment the issue starts occurring. A screenshot would be a good addition to your question.
