If you downgrade your EFI (which can be more difficult), all you'd need to do is upgrade your EFI again, which Apple does automatically. I've done all of these things a lot, and I'm not seeing a scenario where the user could unintentionally screw themselves. | |

Huh? That's not true at all—you can always boot from a USB, and usually do network recovery. Worse case scenario you need to find another machine to make the USB. | |
