You can try to fix disk0 by entering diskutil repairDisk disk0 (after backing up your encrypted macOS volume). Afterwards try to choose your FileVault volume in System Preferences > Startup Disk. Or try to use sudo systemsetup -setstartupdisk /Volumes/Macintosh\ HD and reboot.
