comment Can command or option and shift (just those two keys) be assigned as an OS X shortcut?
When choosing the keyboard shortcut, simply double tap the key you want instead of the "classic" shortcut you would normally have. It will add "double tap" next to the key symbol. Note that it only works for modifier key (command, shift…).

Since 10.9, that is wrong. There is pre-defined shortcuts: codingmassacre.com/2013/10/24/…

I used Charles. But it is probably doable as well with WireShark.

Not yet, but I'm not forgetting it. I'll post my final setup here as soon as I settle down.

comment How can I reliably backup an external drive to another external drive?
Well, I don't really know where my understanding is coming from, but I do know that the reality is far more complicated then "if it's in the latest folder, it's ok", because Backup.backupdb is full of symbolic links. Let's say I made the first TM backup (#1) with my drive connected. After 1h, another backup (#2) is done and the modified bits of my drive are backup up as well. After another hour, my drive is unplugged and another backup is done (#3). Imagine now that TM is thinning my backups and decide to delete #2. I'm afraid modifications on my drive since #1 aren't backed up anymore.
