I haven't run any tests, but I can guarantee you that constantly polling GPS for location data to toggle the WiFi status will use considerably more energy than just polling for WiFi networks directly.

You don't require third party applications to change the icons. When you select an image file and copy it, the pasteboard contains the file, not the file contents. You can change the icon by opening a (say, png) file in preview, selecting all, copying, and pasting in the image well.

Oops missed that. That list accounts for all processes on your machine. All cpu usage will he accounted for. In case youre doubtful, you can compare it to something else, such as the output of the top command.

The accelerometer and gyroscope only sense changes in position and orientation, respectively. Getting absolute position/orientation from changes in position/orientation is possible (it's called dead reckoning), but I'm doubtful that it'll yield the type of accuracy you'll need for an effective mouse. There are many trackpad-esque apps you should give a try.

But what you care if the process uses a high % as "User" or "System"? The distinction between them is completely arbitrary and quite meaningless. It's ultimately just CPU utilization, either it's there or it's not. Just sort by CPU usage and you'll get the top CPU usage culprits.

The User/System CPU usage is fairly arbitrary, does it really matter what the formality of the processor usage is? CPU time is CPU time, and that's easy to check.
