Those are all the processes on your machine.

Oops missed that. That list accounts for all processes on your machine. All cpu usage will he accounted for. In case youre doubtful, you can compare it to something else, such as the output of the top command.

Yes it does, you just need to male sure you show processes from all users from the drop down menu in the top right of the window

comment Is there an app that lets me use an iPhone as a mouse?
The accelerometer and gyroscope only sense changes in position and orientation, respectively. Getting absolute position/orientation from changes in position/orientation is possible (it's called dead reckoning), but I'm doubtful that it'll yield the type of accuracy you'll need for an effective mouse. There are many trackpad-esque apps you should give a try.

But what you care if the process uses a high % as "User" or "System"? The distinction between them is completely arbitrary and quite meaningless. It's ultimately just CPU utilization, either it's there or it's not. Just sort by CPU usage and you'll get the top CPU usage culprits.

comment GUID partition scheme
You can't change a scheme from "Apple to GUID" ... "Apple" is a software company, not a partition scheme. Their devices predominantly use GUID to begin with, so what is it you're going to exactly

The User/System CPU usage is fairly arbitrary, does it really matter what the formality of the processor usage is? CPU time is CPU time, and that's easy to check.

You have to take out the battery when doing this. Which MacBook do you have?

Everything you mentioned about disk dumping, using an external enclosure, etc. are all equally possible with OS X

The error would probably be the same. I suppose backing up, formatting and installing anew would help. 10.6 has access to the Mac App Store, so installing Mavericks from it would be just as easy as ML, without having to make an ML boot disk
