Neither, I would have added them in the Internet Accounts pane so that I wouldn't have to do it multiple times in other apps (i.e. if I tell Internet Accounts that I have a Google Account it will add the calendar to Calendar, the mail to Mail, etc.)

No instructions I'm afraid, I did have everything setup on my workstation before I enabled iCloud Keychain Sync but that's the best I've got in terms of what I did.

Sure it does — if the account password is in the iCloud keychain. See this discussion (among others) for how frustrating it can be for some users that the Internet Accounts themselves are also included in the keychain sync process: discussions.apple.com/message/24571359#24571359

Your question doesn't indicate that you're using Core Storage. If you are using Core Storage you can add devices to a logical volume family without rebooting, if that's what you're asking.

One of the key characteristics of Mac OS X Server is the device manager and assigning profiles and configuration options to do what is being asked. Failing that you can use an alternate method by managing options in the files in /etc/ with something like pymacadmin.
