I literally just finished doing this to my 2011 i7 MBP. Seagate Momentus XT 750 and I also upgraded to 16 GB RAM. Will have to wait and see how performance looks - Geekbench scores haven't really changed after upgrade.

No. If you're in this stage you need to use Ad-Hoc (or TestFlight) to test with, not App Store deployment.

my best guess is that for some reason the device is unable to resolve the DNS for your server. If you can hit the IP it would confirm that theory. However, if that's the case I'm not sure of how to fix it. You might try "forgetting" the network on the device, and then reconnecting.

You can't brick it, but you can wipe it to remove personal data. I think the ability to find a device is built into the OS, so it is not something a thief could remove or deactivate.

in my experience, if my phone connects to WiFi, all data goes over the WiFi even if it doesn't have an external route

I finally got this working, but it would still be nice if this were better documented by Apple. Anyone trying to use AirPrint in a reasonably locked down corporate environment seems likely to run into problems.
