Are you opening them in Preview.app? When viewing any image on a Retina display, Preview uses four screen pixels to display one image pixel. The benefit is most images appear at a traditional physical size, but screenshots of the display itself appear quadrupled. Other image editors, like Acorn and Photoshop, use one screen pixel per image pixel, so your screenshots will appear at a normal size.

I don't know exactly what it's being used for, but it does appear to be a legitimate part of the operating system. Both VTDecoderXPCService and VTEncoderXPCService are within /System/Library/Frameworks/VideoToolbox.framework.

Still the case with iOS 9.2 and iTunes 12.3. "Automatically install new apps" is unchecked in iTunes and automatic downloads are off in iOS preferences.

Typing sudo chown -R gives me the willies. It doesn’t matter what the other parameters are. I have more than Homebrew in /usr/local, and it’s not an obviously-safe command. I confirmed via Time Machine that installing El Capitan chowned, exclusively, /usr/local, and not subdirectories. I was thus able to get away with doing a non-recursive reversion, i.e. sudo chown $(whoami):admin /usr/local. YMMV.

To save others some time: I don't think Adblock can block pages based on content, even with custom filter rules (as suggested elsewhere).

Is there a downside to deleting the old iPhoto / Aperture library? Apple’s support article says to ignore the temptation, but I don’t like leaving old versions of things lying around.
