I'm trying to reset the battery indicator on my iPod touch. To do this I need the battery to be completely empty first. How do I know when this happens?

Right now I can turn it on and it will have about 10-20% then 'die' in seconds. I can do that repeatedly and have been for a couple days now. If I do this long enough will it eventually just not turn on at all, i.e. not even show the 'plug into power source' screen?

You really shouldn't completely discharge the battery of products using Lithium Ion batteries. Read more about them here. – Emil Feb 11 at 21:04
