I'm using Sparrow as my default email app. I have also removed Mail.app from my Mac. Whenever I right click on a file or folder I see options to compress, and options to email the folder/file, but those options don't work.

I checked Preferences -> Keyboard -> Keyboard Shortcuts -> Services but found nothing about them.

How can I remove those options from my right click menu?

Removing standard applications is not recommended because there is always the small chance that it will break a future update. Back to your question: You should indeed be able to disable them in Preferences. The window is rather small, maybe you scrolled too fast. Or add a picture/screenshot of your right-click/context menu, maybe the options come from somewhere else. – patrix♦ Feb 8 at 18:58
