I’m setting up an old iBook and as a result I am also stuck with OS X 10.5.8 and can’t see how I can create a new Apple email address.

Any ideas are welcomed—Apple’s site and OS have been terrible in this regard.

With Apple email you mean an iCloud address? Do you want to create a new one or just get Mail to use an existing one? If you want to create a new one, do you have access to a "newish" OS X/iOS device? – patrix♦ Feb 3 at 9:38
