Is it possible to create a folder containing a single icon? I guess you could drag one icon onto another, then remove the second one, but is there a more "elegant" solution?

@Chris: Actually, I saw a video of a demo of the iOS 4.2 beta for iPad (macrumors.com/2010/09/28/…) and noticed a folder containing one icon. Curiosity got the better of me, thus the 'elegant' request :-). – Ralph Sep 29 '10 at 15:11

You describe the only way to achieve this.

Create a folder by dragging one app on top of another, then drag one of them out of the folder again. It doesn't get any simpler than that.

iPhone iOS 4.0.1. I guess this is a feature added between 4.0.1 and 4.1. – mankoff Jan 9 '11 at 21:11
